So..this dinner isn’t perfectly “on plan” but it is pretty close and with a few little tweaks it can be! It is an awesome healthy spring dinner. It was really over the top awesome. It was a nice romantic little dinner for me and husband, shared while watching the latest episode of Vikings.
On a side note, I am absolutely obsessed with Lagertha Lothbrok. Not to mention Ragnar….the sexiest man alive. Watch and see. Lagertha is the most awesome, sexy, female warrior I have seen portrayed in a while. She rocks. And Ragnar…Wow! Enough about the yummy Ragnar & Lagertha.
On to the yummy Healthy Spring Dinner.
The menu last night included:
Beet Salad and a Protein Burger! Delish! The problem is that the longer I cook and the more I create recipes, the less I know exactly how much of anything I use. It varies, depending upon whether you are interested more in keeping trim (add less oil). It is all up to personal feel. Intuition! Smell and taste everything. Get to know your food.
Best Beet Salad:
2 Containers Trader Joe’s Steamed Beets (in refrigerator section)
1/2 a white or red onion, sliced thin and rounds cut in half (ON PROGRAM OMIT)
a handful of basil, chiffonaded
1/4 cup + balsalmic vinegar (ON PROGRAM SUBSTITUTE RED WINE VINEGAR)
1-2 Tblsp EVOO
1 tsp Dijon mustard
2 cloves garlic, minced
1-2 Tbsp Grated Parmesan
1/4-1/2 tsp nutmeg
1/4-1/2 tsp fresh thyme
salt and pepper to taste
1 Tbsp – 1/4 cup candied walnuts (ON PROGRAM USE REGULAR WALNUTS)
Herbed Chevre (ON PROGRAM USE 1 PACKAGE HERB AND GARLIC LAUGHING COW LIGHT CHEESE)
- Cut up beets, onions, and basil in bowl
- Make vinaigrette. In a small jar add vinegar, mustard, garlic, Parm, nutmeg, thyme, and salt and pepper. Cap and Shake Shake Shake!
- Drizzle in oil and Shake Shake Shake to make an emulsion. Pour over beets and herbs and let sit for at least and hour.
- When ready to serve. Add the candied walnuts and spoon the chevre on top.
This was awesome! We paired it with a protein burger. We bought the Extra Lean patties at Trader Joe’s. They only have 130 calories a piece. Score! Ad cooked them up on the BBQ and I added a little light mayo, Dijon, Dill pickle relish (I had it and it is good), a tomato and some onion. I wrapped those little patties in lettuce. It was divine!
Sometimes, you don’t thing you can get a healthy spring dinner that isn’t just grilled veggies and meat. Don’t get me wrong, I love grilled veggies and meat but this is so much more and so healthy. I ate ALL of this last night at 7 and woke up a pound lighter this morning. Life is good. Spring healthy dinner is a success!
